This is a super quick recipe that is sure to impress! These exotic flavors will be a perfect compliment to a Caribbean themed meal! It took me about 20 minutes to make this dish and it was pretty cheap to make!
- One can of Dole Pineapple CHUNKS w/juice
- Limes (save peels for lime zest)
- Salt & Pepper
- Jasmine Rice
Boil water. Add rice, juice of 2 limes, butter, salt, pepper, pineapples AND pineapple juice. (dump the entire pineapple can in there) After the rice has softened, add in lime zest (grated lime PEEL – use a (cheese) grater or apple corer (all I had), scallions and cilantro. Stir, cover and let sit for a few moments.

This is definitely a date night recipe, especially if you man is in the mood for something a little exotic! I would serve this with a shrimp ceviche or grilled salmon with mango chutney. To make a complete dish, I’d add grilled shrimp and a little bit of mango…and don’t forget the wine!!!! I’d go for a Sav Blanc with this dish!!
